Nigrum
Since 1946 Mascaró family has taken care of controlling the quality of its products throughout all the production process, from the vineyard to the bottle.
The grapes used to produce the base wines come from “Mas Miquel” estate, located in Aiguamúrcia (Tarragona). The recollection is manual and it is taken to the winery in small boxes to protect the qualitiy of the grapes.
To prepare our cavas we press the grapes without destemming, champanya style, that means that we squeeze but not break the grain, and weuse only the grape-juice of the highest quality to elaborate our base wine. This juice is fermented at controlled temperatures to preserve its rich aroma.
The process of second fermentation and aging in bottle gives structure and and complexity to our cava, a high quality product.
Cava Reserve Brut “Nigrum” is our classic cava, we produce it since 1946. It is a Cava Reserve balanced and with personality.
TASTING
Pale yellow color and shiny. The bubbles are fine and have good presence.
Fruity aromas and fine upbringing.
At taste is dry, full bodied and balanced.

Given its characteristics, this cava is a versatile, excellent to accompany light meals and casual dining.
We believe that the essence of a product is in its origin and this is the reason why Cava Reserve Brut “Nigrum” is made with grapes from our own vineyards at “Mas Miquel” estate, registered in DO Cava. That way we can control all the production process ensuring the quality of the final product.
We process the different grape varieties and vintage separately to produce our Cava Reserve Brut “Nigrum”. Thus obtaining, after fermentation, a Parellada, Macabeo and Xarel·lo base wine.
A winemaker of the Mascaró family is in charge of the blending, a process that defines the unique personality of the Cava Reserve Brut “Nigrum”, our most classic cava.
The aging of this cava lasts a minimum of 2 years in the heart of Penedès region (Spain) and it is done in a beautiful modernist building located in Vilafranca del Penedès in the underground tunnels of our cellars, built in the 40s.
