Karesia
In Sant Climent town (Spain) cherries grown since late nineteenth century as an alternative to growing grapes, which at that time was destroyed by phylloxera. Since then this region has become the first producer of cherries in Catalonia and Sant Climent is the first town in the region for cherries planted extension (about 288 acres) with 30 different varieties.
Gerard Solís, chef and owner of El Racó restaurant, proposed us the elaboration of a cherries liquor to complete the interesting cuisine that he is making.
This liquor is elaborated following a recovered recipe and from the cherries natural maceration in liquor for 40 days. This enables us to extract the color and flavor of this Mediterranean fruit.
