Red Wine
Since 1946 Mascaró family has taken care of controlling the quality of its products throughout all the production process, from the vineyard to the bottle.
The grapes we use to produce our wines come from our own estate “Mas Miquel” located in Aiguamúrcia (Tarragona), an old property of the monks who inhabited the Cistercian Monastery of Santes Creus (Tarragona).
When the grapes are at its optimum point of ripeness the harvest begins. This is a manual process at Mascaró in order to maximizie the grape quality and to ensure that arrives to the cellars in the best condition.
Once in the cellar, we separate the grain from the stalks. We put the grain into the fermentation tanks, where after a period of maceration the fermentation begins. During this process the temperature remains between 28°C and 32°C and we stir the content of the tank to facilitate the extraction of color and tannins from the skin grape. At the end of the fermentation process we let the wine macerate to give it more structure.
We remove the wine from the tank and when the malolactic fermentation is done, the aging process, that lasts 12 months, begins in American oak barrels.
